For an easy dairy-free cake, that is nut free and soy free, you’ll need one box of your favorite dairy-free cake mix and one can of diet or regular soda. Combine cake mix and soda into a mixing bowl and bake as directed. No eggs, no oil, and no water is required to make this very easy and simple dairy-free cake! For a mouth watering three berry pie, you’ll need

1c fresh strawberries, halved
1/2c white sugar
3tbsp cornstarch
2c raspberries
1 1/2c fresh blueberries
and 1 recipe pastry for a 9in double crust pie. (Click here for an example)
In a large mixing bowl, stir together sugar and cornstarch. Add strawberries, raspberries, and blueberries; gently toss until berries are coated. Line a 9 inch pie plate with half of the pastry. Stir berry mixture, and transfer to the crust lined pie plate. Top with second crust, and seal and crimp the edge. Bake at 375 degrees F for 45-55 mins. Cool on a wire rack and serve with a dollop of Smackin’ Good non-dairy whipped topping.
